Chocolate Fruit & Nut Cake.

Ingredients
80g Unsalted butter plus extra for greasing
100g Light Brown soft sugar
65g Caster sugar
1 egg
45ml single cream
80ml Chocolate Porter
1/2 tsp vanilla extract
115g plain flour
1tsp bicarbonate of soda
1/2 tsp salt
50g Natures Table Cherry and Berry mix
75g Nature's Table mixed nuts
50g plain chocolate, chopped
Chocolate Icing
40g plain chocolate
100g unsalted butter
200g icing sugar
1 tbsp. chocolate porter
1 Preheat oven to 180C,gas mark 4. Grease and line 15cm cake tin.

2 In a large bowl, cream butter, brown sugar and caster sugar using electric beaters until light and fluffy. In another bowl, whisk egg with the cream, chocolate porter and vanilla extract until smooth, then gradually beta into the butter mixture.

3 Sift together the flour, bicarbonate of soda, and salt, then fold into the batter with the Cherry and Berry, nuts and chocolate. Spoon into the tin and bale for 45-50 minute until a skewer inserted comes out clean. Leave in the tin for 10minutes, then remove and completely cool on a wire rack before slicing the cake horizontally.

4 For the icing, melt the chocolate and set aside to cool briefly. Meanwhile, beat the butter with the icing sugar and chocolate porter until smooth, then stir in the melted chocolate. use half the icing to sandwich the cakes together and spread the rest evenly on the top!
