Delish Date Nut Muffins

Ingredients
For the Date Muffins
  • 150g Sun Cottage dates chopped
  • 150g Sun Cottage prunes chopped
  • 150g Sun Cottage raisins
  • 225ml water
  • 225g butter
  • 1/4 teaspoon salt
  • 140g flour
  • 1 teaspoon baking soda
  • 2 eggs whisked
  • 1 teaspoon vanilla
  • 60g Nature's Table walnuts chopped
Instructions
Cook the fruit
  1. Preheat oven to 350 F
  2. Put dates, prunes and raisins in a saucepan with water
  3. Bring to boil and cook for 10 minutes
  4. Lower heat and add butter and salt and take off the heat once butter melts
  5. In a small mixing bowl, add eggs and vanilla and whisk until combined
  6. In a medium mixing bowl, combine flour and baking soda
  7. Add date mixture, egg mixture and walnuts to the dry ingredients and mix with a rubber spatula until moistened
  8. Line muffin tins with muffin cups
  9. Fill cups with batter
  10. Bake for 20 minutes
  11. Check with cake tester to see if done
  12. Let cool for 5 minutes in muffin tin
  13. Slather a muffin with butter
  14. Eat
  15. Enjoy
