Shahi Chicken Quorma

Ingredients

2lb Chicken
-
2 onions - sliced
-
1 1/2 tsp garlic paste
-
1 packet of cashew nuts
-
4 tbsp plain yoghurt
-
2 green chillies
-
2 bay leaves
-
10 whole peppercorns
-
2 cardamom pods
-
1/2 small carton of single cream
-
4 spoons of oil
-
1 1/4 tsp salt
-
1 1/2 tsp ginger paste
-
1 oz blanched almonds
-
4 tbsp milk
-
2 tsp cumin seeds
-
2 cinnamon sticks
-
8 pepper cloves
-
3 green cardomoms
-
1 thin slice bread
Garnish : Fresh coriander and almond flakes
Optional : Golden sultanas

Cut the chicken into 2"cubes

Using a liquidiser, make a paste with the onions, salt, garlic, ginger, nuts, yoghurt, milk and green chillies

In a pan, heat the oil and add the cumin seeds
-
When they start to pop, add the chicken and mix
-
Stir in the paste and cook on a high flame for 2 mins

Add the whole spices and simmer on a low heat for a further 10 minutes
-
Gently stir in the cream and simmer for another 8 -10 mins checking every 2-3 mins - golden sultanas can be added at this stage

Remove the lid and put the heat on hign, reduce the sauce to the required consistency stirring gently until the oil has surfaced

Gently melt in the butter

Serve garnished with green coriander and flaked almonds
